The Atkins Nutritional Approach is known as many name, including the Atkins Diet or Atkins, for short. This diet has had many followers, as well as opponents who dub this approach as unhealthy. This diet has become one of the most well-known and marketed of the methods which involve a low –carbohydrate diet. Many claim that this is the perfect way to lose weight fast.

The diet was created by Dr. Robert Atkins, who wrote the popular “Dr. Atkins' Diet Revolution,” which was first introduced onto the market in 1972. The original book was later revised after receiving criticisms from a variety of critics and advocates.

There are four phases when following the Atkins Diet Plan:

Phase One

This phase is referred to as the induction. A dieter will restrict their carbohydrate consumption to 20 grams per day. During this phase, a dieter will receive their carbs from non-starchy vegetables.

Phase Two

During this phase, which is called “Ongoing Weight Loss (OWL), a dieter is allowed to eat a few more carbs that are filled with nutrients and fiber. During the first week of this phase, carb consumption increases to 25 grams daily. The next week it is increased to 30 grams per day. This is continued until the dieter does not see any further weight loss.

Phase Three

Dieters will experience a transition from weight loss to weight maintenance. This phase is referred to as Pre Maintenance. Their daily carbohydrate intake increases by 10-gram increments each week as long as gradual weight loss is apparent.

Phase Four

Known as the Lifetime Maintenance phase, deals with the focus of maintaining a healthy approach to controlling carbohydrate consumption.

Atkins Diet Recipes

Atkins Cornbread

Ingredients

Vegetable oil spray for greasing baking pan

1/2 cup Atkins Quick Cuisine Bake Mix TM

1/4 cup wheat gluten

3 large eggs

1 cup milk

1/3 cup vegetable oil

4 ounces jalapeno jack cheese, grated

1 chipotle en adobo, finely chopped (optional)

Directions

1) Preheat oven to 425F.

2) Spray an 8-inch square baking pan with oil spray.

3) In a medium bowl, combine bake mix and wheat gluten.

4) In another medium bowl, beat egg, milk and oil.

5) Stir in cheese and chipotle (optional).

6) Combine bake mix and egg mixtures, stirring until ingredients are just combined (batter will be stiff).

7) Spread mixture into prepared pan.

8) Bake 15 minutes or until golden.

9) Cool on a wire rack 5 to 10 minutes before cutting.

Asian Beef Salad

Ingredients

Marinade and Dressing Base

4 green onions, chopped

3 garlic cloves, pushed through a press

1/4 cup soy sauce

2 tablespoons rice wine vinegar

2 teaspoons sesame oil

1 teaspoon granular sugar substitute

1/2 teaspoon curry powder

1/4 teaspoon dried ginger

Salad

1 1/2 pounds beef sirloin steak, cut against the grain into 1/8" strips

2 tablespoons canola oil

6 cups mixed salad greens

1 red bell pepper, thinly sliced

1 can (8 ounces) sliced water chestnuts, drained

Directions

1) Mix green onions, garlic, soy sauce, rice wine vinegar, sesame oil and sugar substitute in a small bowl. 2) Pour half into a resealable plastic bag; add steak and let marinate overnight.

3) To remaining soy sauce mixture, add curry powder and ginger.

4) Heat canola oil in a large skillet over high heat until very hot.

5) Drain beef and discard marinade.

6) Quickly stir-fry 2 to 3 minutes in hot oil for medium doneness.

7) Transfer to a large mixing bowl.

8) Add salad greens, bell pepper, water chestnuts and soy dressing.

9) Toss to coat.

Atkins Crab Cakes

Ingredients

3 tablespoons vegetable oil, divided

1 small red bell pepper, finely chopped (about 1/2 cup)

3 green onions, finely chopped

1 pound lump crab meat, picked over to remove any shells

1 cup fresh PageLink(Atkins Bread Crumbs), divided

1 cup mayonnaise

3 tablespoons fresh parsley, chopped

1/2 tablespoon Old Bay seasoning

2 lemons, cut into wedges for garnish

 

Directions

1) Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat.

2) Cook bell pepper and green onions until softened, about 3 minutes.

3) Transfer vegetables to a large bowl.

4) Add crab, 2 tablespoons breadcrumbs, mayonnaise, parsley and Old Bay.

5) Mix with a fork until just combined, being careful not to over-mix.

6) Cover and refrigerate for 20 minutes.

 

To assemble crab cakes:

1) Sprinkle the inside of a 1/3 cup solid measuring cup with a thin layer of breadcrumbs.

2) Fill measure with crab mixture and sprinkle a layer of breadcrumbs on top.

3) Pack lightly using hands or another measuring cup.

4) Invert crab cake onto a plastic-wrap lined baking sheet.

5) Repeat with remaining breadcrumbs and crab mixture to make 8 crab cakes.

6) Cover with plastic wrap and refrigerate at least 1 hour or up to 24 hours.

 

To cook:

1) Heat 1 tablespoon oil in large nonstick skillet over medium-high heat.

2) Transfer four crab cakes to skillet using a wide metal spatula.

3) Cook 3 to 4 minutes per side, until golden brown and crisp.

Atkins Chocolate Slushies

(4 Servings)

Ingredients

1 cup heavy cream

1/2 cup sugar-free chocolate syrup

1/2 cup water

2 tablespoons cocoa powder

1 teaspoon vanilla extract

Directions

1) In a medium saucepan combine cream, syrup, water and cocoa powder.

2) Bring to a boil over medium heat.

3) Reduce heat to low; cook, stirring occasionally, 5 minutes.

4)  Remove from heat and stir in vanilla.

5) Pour mixture into two ice cube trays.

6) Freeze 2 hours.
